about this ramen: tantanmen is the japanese take on chinese dan dan noodles. it’s spicy, fresh, rich - a fiery sesame-soy-sauce smack in the chops. it's traditionally served with a thin tokyo noodle, but we love our thicker custom noodle here. if you've tried our tantanmen kit before, this is the same style but updated - the same version we now serve in our restaurant. it's more refined, deeper-flavoured, but slightly less heavy. we're really proud of this one! if you enjoy this, keep an eye open for our shiru-nashi mazemen in the near future - a soup-less mixing tantanmen, particularly popular in hiroshima.
